Situated in the lush countryside of the Province of Ragusa, the story of the Eremo della Giubiliana is lost in the mists of time* until the fifteenth century it was a hermitage and fortified baglio, in defence against barbarian pirate raids, in the sixteenth century the Knights Hospitallers of St. John of Jerusalem left traces of their permanence there, and finally, in the eighteenth century the feudal holding became the property of an aristocratic family of the area, whose descendants decided to open this lovely estate to the public. The restoration work carried out has been sensitive, fully respecting the original design and materials, endowing splendor and beauty to this old Sicilian country residence with its warm, welcoming ambience. The rooms have been converted from the ancient monastic cells* provided with TV, telephone and private bathroom, they are furnished with antique Sicilian furniture and original decor and ornaments. The Eremo della Giubiliana is therefore a place that evokes a bygone time, history which is handed down also through the cuisine* in the restaurant, with its superb vaulted ceilings, typical Ragusan dishes are served, using organic produce from the structure*s own vegetable gardens* the bread, flat bread and pasta are all home-made, while the wine produced on the estate is excellent, although there is also a vast range of wines available, all of which can be tasted in the lovely cellar housed in the converted medieval crypt. Finally, there is a feature that distinguishes the Eremo della Giubiliana from all the other accommodation structures* the private airport, with 700 m. runway where 28-seater light aircraft can land coming in from any of the European Community countries. The airfield is also provided with car parking, hangars, radio and weather forecasting services, and also hosts flying and parachuting courses* there is also an aircraft constantly available to take marvelous excursions to admire Sicily, Malta, Lampedusa and Pantelleria from on high. For those who prefer to keep their feet on the ground, there are many alternatives* the private beach a 8 km away - inside the Irminio nature reserve - guided visits to the Baroque towns of the Noto Valley, excursions by mountain bike and by boat, hiking, archery, roller blade piste and cookery courses. The Eremo della Giubiliana is open all year around.
