In the very last kilometers before you reach Laguiole, a change over the landscape. As the countryside becomes more and more peaceful, the light, by contrast, grows brighter. Aubrac remained unspoilt. The establishment has been slowly taking shape in our hearts and minds for years, moulding itself perfectly into the countryside. A place bathed in light, with an uninterrupted view of infinity. Granite and slate outcrops, reminiscent of the "burons". A set of buildings which is revealed a little at a time, like the countryside it nestles in. A "draille" an old herdman's path - which goes from building to building, gives a glimpse of the village of Laguiole. The restaurant forms the "roof": it floats and opens awkwards, lefting the light stream to the tables. The dining rooms is thus transformed into a theatre for a spectacular who with nature staring both outside and on the plates. The lounge is glasses in at one end so guests can enjoy a quiet smoke or a glass of rare spirits in an aerial, almost unreal setting - the atmostphere in the bedrooms below is quite different. Tucked into a dip in the land and drenched in Aubrac's special light, each giving its occupants the private enjoyment of a landscape which seems made for them alone.
