The restaurant is run by Andrea and Lidia Alciati. Their concept combines a bland of Piedmontese traditional dishes with modern fine dining. The wine cellar collects more than 2500 labels coming mainly from Piedmont/ Europe and rest of the world. Since november 2003 / the unique Vinotherapie Caudalie SPA is nested in the highly original cellars of the monastery/ under dry stone vaults and in a refined atmosphere created by ancient wood combined with century-old stones and italian mosaics.
